Hay varias recetas, pero ahi te va una version:
Ceviche de camaron
2 lb de camaron 1/2 de tomate 1/2 de cebolla (roja) 1 cucharada de salsa de tomate (ketchup) 1 cucharada de mostaza 10 limones criollos (pequenos) sal ,pimienta ,al gusto cilantro finamente picado al gusto
Poner ha hervir un litro de agua cuando ya este hirviendo a borbotones se tira el camaron por unos de 15 a 30 segundos, se lo saca del agua y se deja enfriar . Aparte se raya el tomate, se pica la cebolla finamente , la cebolla se pone a curtir con el jugo de 4 limones. Despues se mezcla la cebolla con el tomate rayado y cilantro picado sal y pimienta al gusto. Por ultimo se le agrega al camaron el resto del jugo de limon y sal al gusto y se mezcla en un bol todo . se lo sirve acompanado de platano finamente cortados y fritos (llamados chifles).Ademas de ser rico es pobre en grasa.
Se debe sernir bien el camaron para que no quede con mucha agua,si ve que el camaron no cocino bien hervirlo unos segundos mas no hervirlo demasiado.

You know what I love? You know those chinese noodle soups they sell, they're like 4 for a buck, and they come in diff. varieties (chicken, beef, vegetable, shrimp)... Those are delicious... and ultra-cheap.

Well, I really like carne asada con tortilla y chirmol (salvadorean chopped tomato,parsley,cilantro,and salt dish), and some salad witj radishes. And also pupusas at down, really hot with curtido, acompanied y a nice and steamy chocolate.
Plus, that delicious JAlea, and other mariscos; most kinds of tapas such as " camarones al aji"; greek food,chinese and vietnamese. Also, colombian,argentinian,and chilean empanadas at down accompanied by cool tinto wine.
I say away from pork dishes and raw meats and fish.
Ummmm .... Ceviche de camaron y concha for sure!! Cuy tambien pero I can only eat that in Ecuador LOL, and the best part es la pata del cuy soooo crunchy .... Fritada, tortillas con chorizo yummy yummy! Mote, tostado, hay todo!! Tambien me encantan las pupusas de chicharron ... Las empanadas chilenas, colombianas, ecuatorianas ...
I tried carne a la mexicanita from Camino Real it was good but spicy LOL!
I love my ecuadorian food,.. I m from the coast so I love seafood,.. everything I see I eat ,.. ahora en serio,.. me gustan todos los mariscos,..y los diferentes platos que se pueden hacer con ellos,... me encanta el ceviche, encebollado,.. chupe de pescado,.. sango,.. corbiches,.. guatita,..caldo de salchicha,.. sopa de queso hmmmm,.. ya me dio hambre,.. mejor dicho todos los platos ecuatorianos,.. el hornado,.. no he probado el cuy ,,...pero si me han dicho que es bueno,.. I can keep adding more dishes ,.. I love them all,.. me gustan las pupusas,.. empanadas colombianas y chilenas,..

Oh, I know I shouldn't do this right now 'cause I'm starving, but some of my fav dishes are milanesas (argentinas), pupusas (salvadoreńas), vaho (nicaragüense). I also love all types of juicy foods (guisos) and for dessert tres leches (nica) and any type of cheesecake...
(It's too bad they don't have an emoticon for drooling, 'cause that's how I am right now...

Your ceviche is different than the one from Peru. It looks good, unfourtunately I am allergic to shellfish. ie. Lobster, crab, shrimp, musscles and clam etc...

It tastes like chicken doesn't EVERYTHING taste like chicken? HAHAHA - It's hard to describe; but you got to try it... unless you're one of those that first eats with their eyes and says: "no eso no me gusta porque parece rata" I specially like la pierna del cuy - tender meat, and when seasoned properly con garlic and whatever spices grandma used - queda como pa' chuparse los dedos... recuerdo que dejaba los huesos "limpios"!

apetizers: calamari, smoked salmon or foie gras (duck liver)
main dishes: Steak (M/R), Cuy con papas (Ecua), Duck breast, Lobster and seafood in general
desert: cream caramel
I am no cheff, but I do know my way around the kitchen so not to starve myself to death - of my list, I can do the calamary, steak, even the cuy (mind you not as good as grandma), duck breast and lobster - maybe just not as good as when a real pro does it.
