Wrong!! You don't have to be in the country of origin to extend your visa! And if it has expired, you have a grace period that let's you apply before it gets too late. You can check out www.cic.gc.ca and you will get more info there or else PM and i can answer your Immigration questions

I want to fly back to Chile to visit my family on December, but I'm not sure when the classes end.
En el website dice que el semestre termina el 15 de Diciembre. Asi que quizas viaje el 16 Diciembre y vuelva a Canada el 6 de Enero.
If somebody can help It would be great!
