@ Chilenita & LSC - the pic that LG posted is a typical Ecau. Fritada plate (bueno falta el maiz frito con sal). The white stuff is called : MOTE (sooo good)
The peanut stuff is used in diffrent ways:
Guatita - (which BTW my mom makes with patatos, not yuca, i guess it's prefrence) is made with peanut sauce & has patatoes, & the main things is el "Mondongo" (which is i think the cow's tummy, which smells like hell & needs to be cleaned very well, so u take the bad taste out & the smell, keep in mind that if it's not cleaned properly u can actually taste the nastyness in the food as u eat it. )
Yapingacho - (which in latin festivals is given with el hornado) is hornado (optional, really not part of the dish) , mote, lechuga, la mitad de una salchicha y un huevo frito, aguacate, y papas hechas como arepas (osea fritas) y encima se les pone la salsa de mani.
Fanesca - (made for semana santa) it's a soup peanut base & it's filled with every kind of beans u can every imagine, choclo, & mainly bacalao fish.
These are mainly the big dishes we have, now u can make little invasiones with the peanut sauce, but it's not the same.
OMG just thinkin of this makes me soooo hungry!!
BTW chilenita I have no clue where or how to start to make the sauce from scratch, I know u need a smooth peanut butter jar. LOL I can get u my moms receipe, but that's all, if u wish.

La cebolla "colorada" (red onion) is very taste the way some Ecua's prepare their salad because they take the bitterness away by washing and rewashing 35 time with lemon/lime, dash a bit of salt too, and some cilantro + whatever else they may like.
I don't know what PENIS SAUCE you're referring to... Sorry! Also for the SALAD??
